Part one - Background of the company: I have chosen a small Japanese restaurant (Kasumi) in Macao. It is a very small restaurant in Macau behind the world heritage Ruins of St. Paul. The surrounding area is peaceful. Kasumi only offers a few dishes : 6 types of Japanese pizza, 2 types of cold noodles, 2 types of curry rice , different favor of green tea. Those dishes are special because the chef, who is the owner, is Japanese. His wife is the only waitress in the restaurant since it is difficult to employ people in Macao (Macao is enjoying a fast growing economy and many catering industry is having a headache to employ people. There is a cashier responsible for accounting system and a stock control person to manage the stock. Both of them will become part time waiter and waitress if it is very busy.. they are good service though) There is only simple decoration in the restaurant but because of the small size, the capacity is around 20 people. There is an open kitchen for the guests to observe the whole cooking process.
The gimmick of the restaurant is that the guests could choose their favorable ingredients to create the Japanese pizza and able to watch the entire cooking process. Nevertheless, there is one chef and time management is week. This restaurant is also week in marketing, no promotion and no webpage for browsing.
Part two - Evaluate the value chain: able to show the linkage between primary and supporting activities. I have uploaded a value chain diagram for reference and some of my notes about the value chain.
Part three- Explain which primary activities are add-valued and which activities are threat.
Part four - measures of improvement in the current value chain and develop the competitive advantage (and /or differentiation, should mention the cost advantages ) so that the restaurant is able to sustain over next 5 years .
